Hmm, that's a cool idea. Just use chrome acorn nuts or something?

It's so well hidden the chrome acorn nuts aren't necessary.  What I do like to use there are nuts with captured star washers on them.  That way there's no hassle of dropping or losing the washer as you're getting the nut started.  Getting the nut started on the threaded rod sticking through is much easier than getting the bolt started in the fairing doing it the "normal" way.  Never again booger up threads this way.

Thanks for the pic with the winshield bag!!  It's the first one I've seen with both the bag and the mount.  Could you take a few more from the side and top? 
Those pics were taken with fairing and windshield OFF.  However...the bags don't fit very well with everything back together.  Might try cuttin the end one off.  Ended up takin 'em back off.  Gonna snoop around and see what else is available.

Negative..It was the 3 pocket'r with the clips that grab the inner fairing.

Did you mount the Touratech mount with the "shock absorbers" or just the locking portion of the mount?

Just the locking part...I toyed both ways..coulda used the back part with big washers to mount it to the dash, then mount the Zumo to the locking part, but...?
