S&S Cam Questions

The S&S 585 cam 45 intake valve close turns on at 3500 rpm. The 600 cam 55 intake valve close at 55 turns on at 3500, even though it closes 10 degrees  later. Then the 640 cam turns on at 3000 rpm that is 5 degrees later than the 600 cam? What am I missing? I understand that the later the intake valve closes the higher the rpm it turns on. But the 585 and 600 both turn on at 3500 and the even bigger cam the 640 turns on at 3000?

I have run the S&S .600 in a 100" bagger, and currently in a 113" FXR. Does not disappoint. It's better in a light bike, but still good in a heavier one. Quiet too.
