If you have the room to store a 7X14 Vnose, the space in the front and behind the bikes is useful in manuevuring around the bikes once in the trailer and for carrying your baggage/luggage.

Can you still stagger the bikes in a 7x12 with a V nose?

Yes

Check the links below.
I have a 6.6 by 12 with a V nose, with an extra 6" added height.
It is a lowpro trailer - which means it has drop axles, lowers the entry height, and typically come with a interior height of 5'6"

If I were to do it again I would go with something in the 7' (true inside dimension) and 14' in length, maybe with a V.

My trailer at 78.5" inside width is just wide enough for two dressers, but you have to pay attention with the loading. ANd I use Bike Pro chocks, drive in, step off.

Two axles unless you have to monkey it around in the yard by hand. The stability is really nice to have.
With the single axle in a 12 or 14 ft trailer you are very close to or exceeding the weight capacity with two dressers. Don't forget, when you read the axle capacity it includes the weight of the trailer. 2000 pound axle with a 1000 pound trailer gives you 1000 pounds of cargo, less then the weight of two dressers.

Wondering if HD  would subsidize trailers for 110 owners which would help to alleviate the periodic gasket failure? No miles = no failures, and you could still keep up on the OCD!  ;D
